BUTTER ORANGE

CUPCAKE WITH CHEESE TOPPING

INGREDIENTS

Cupcake

  • 125g butter
  • 100g sugar
  • 2 eggs
  • 110g flour
  • 1 ½ tsp baking powder
  • 2 tbsp milk
  • 1 tsp orange zest
Cream Cheese Frosting

  • 270g cream cheese
  • 80g icing sugar
  • 10ml Double Lion Flavoured Concentrate Orange

METHOD

  1. Mix flour and baking powder in a bowl. Set aside.
  2. Cream butter and sugar until fluffy. Add in eggs one at a time and mix until well combined.
  3. Next fold in flour mixture followed by orange zest and milk into the batter.
  4. Spoon the mixture into cupcake cups and bake at 160°C for 15-20 minutes, depending on the size of cupcakes. Remove from oven and set aside to cool.
  5. To make the cheese frosting, cream the cream cheese first then add in the icing sugar.
  6. Cream for 3 minutes, then add in Double Lion Flavoured Concentrate Orange and mix well.
  7. Transfer the cream cheese frosting mixture into a piping bag with a nozzle and pipe on the cupcakes. Serve.
